When infused with Butterfly Pea Flower, Wheyward Spirit turns a beautiful blue hue for this refreshing springtime cocktail. And once added to the rest of the cocktail, a color-changing surprise appears!
1 1/2 oz Butterfly Pea Flower Infused Wheyward Spirit
1/2 oz Honey Wine Syrup
1/2 oz fresh lemon juice
3 oz high quality tonic (We like Fever Tree Tonic)
Garnish: fresh herbs such as thyme, mint, and rosemary
Measure the Wheyward Spirit into a small shot glass and set aside. In a footed tonic glass combine the syrup, lemon and tonic. Garnish with herbs.
When you are ready to present or drink, pour the infused Wheyward Spirit into the glass to watch the magic color-change happen. Stir drink to combine.
Butterfly Pea Flower Infused Wheyward Spirit
Makes 12 ounces
1 1/2 cups (1/2 bottle) Wheyward Spirit
6 dried butterfly pea flowers (can be purchased online)
Place ingredients into a jar. Seal lid and shake. Let infuse at room temperature for at least 10 days before using, (shake jar occasionally). Store at room temperature for up to 60 days.
Honey Wine Syrup
Makes 8 ounces
1/2 cup local honey
1/4 cup pinot grigio
1/4 cup water
Place ingredients in a small saucepan or microwave until it just comes to a simmer, immediately remove from heat. Let cool and store refrigerated up to 14 days.
For a sustainable option try making this with flat champagne or sparkling wine instead of discarding it!
